Potato casserole with minced meat and green peas

Ingredients:
500 g minced meat,
1 kg potatoes,
250 g frozen or fresh green peas,
2 onions,
1 carrot,
70 ml vegetable oil,
30 g tomato paste,
10 g greens,
50 ml mayonnaise,
100-150 g cheese,
1 tsp. seasonings for minced meat,
1 tsp. seasonings for potatoes,
salt - to taste.

Preparation:
Fry the finely diced onion until translucent. Add grated carrots to it and fry together for 3 minutes. Then add the minced meat to the vegetables and fry everything together over low heat for 10 minutes until almost done. Then add tomato paste and simmer for 2 minutes, then add green peas and simmer for 5-7 minutes. At the end of cooking, add herbs, salt and spices to taste. Transfer the stew mixture into a form greased with vegetable oil. Grate the potatoes using a coarse grater and place them on top of the meat, carefully leveling them over the entire surface. Salt to taste and sprinkle with herbs and spices. Gently spread mayonnaise over the potatoes. Sprinkle grated cheese on top of the casserole and cook in an oven preheated to 190-200ºC for 25-30 minutes.

Casserole with minced chicken and carrots

Ingredients:
700 g minced chicken,
200 g carrots,
1 onion,
2 cloves of garlic,
2 tbsp. l. flour,
1.5 cm ginger (optional)
salt, ground black pepper - to taste.

Preparation:
Peel the carrots, cut several thin strips from them using a vegetable cutter, and grate the rest on a fine grater. Grate the ginger and garlic, finely chop the onion. Place everything together with the minced meat in a bowl, add salt, pepper and knead thoroughly with your hands. Add semolina and mix well again. Place the finished minced meat evenly in a baking dish. Place a lattice of reserved carrot strips on top of it and, to prevent it from drying out in the oven, grease it with softened butter or mayonnaise and bake in an oven preheated to 180ºC for 30-35 minutes. Cover the prepared casserole dish with a lid and let stand for 5-10 minutes.

Minced fish casserole with rice and cream

Ingredients:
400 g minced fish,
100 g raw rice,
1 onion,
200 ml cream,
100 g grated hard cheese,
salt, pepper - to taste,

Preparation:
Boil the rice until half cooked. Leave a little cheese to sprinkle on the casserole, and mix the rest of the cheese with the boiled rice. Add diced and fried onion, salt, pepper to the minced meat and mix. Pour half the rice into the baking dish, spread the fish filling evenly on top and cover it with the rest of the rice. Sprinkle the top layer of the casserole with a small amount of the reserved cheese and pour cream. Place the casserole dish in an oven preheated to 180ºC and cook for 40 minutes.

“Goldfish” casserole with tomato and onion sauce

Ingredients:
700 g minced fish,
150 g of onions or green onions,
50 ml cream,
1 carrot,
1 egg,
½ tsp. ground ginger,
salt, pepper - to taste.
For the sauce:
3 tomatoes
3 onions,
1 tbsp. l. sweet paprika,
salt, pepper - to taste,
vegetable oil - for frying.

Preparation:
Grate the carrots on a fine grater, finely chop the onion and add the vegetables to the minced meat. Beat in the egg, salt, add pepper, ginger, pour in the cream and stir. Place the minced fish in a greased form and bake in an oven preheated to 180ºC for 40 minutes. Meanwhile, cut the onion into half rings and fry it in a frying pan with heated vegetable oil. Grate the tomatoes, add them to the onion, add salt and pepper and cook for 5-7 minutes until the sauce thickens. Remove the casserole from the oven, pour the prepared sauce over it and place in the oven for another 10 minutes.

The most popular is potato casserole with cheese and minced meat. It is prepared from raw or boiled vegetables, as well as mashed potatoes.

The casserole can be prepared not only from potatoes, but also from other vegetables. As a rule, these are zucchini, cabbage or eggplant.

Minced meat is used mixed, chicken or turkey. It is better, of course, if it is homemade. It is pre-fried with onions.

Casseroles with cheese and minced meat are also prepared from pasta or cereals.

The ingredients are laid out in layers in a heat-resistant form. Each layer is smeared with mayonnaise or poured with tomato or white sauce. The top is generously sprinkled with cheese shavings and baked. Cooking time depends on what products are used: raw or cooked.

The finished casserole is cut into portions and served with sour cream or ketchup.

Recipe 1. Potato casserole with cheese, minced meat and tomatoes

Ingredients

  • half a kilogram of potatoes;

Cooking method

1. Place the minced meat in a bowl, season it with spices and salt. Add the egg. Knead well.

2. Wash the peeled potatoes and cut into circles three millimeters thick. Place the vegetable in the bottom of an ovenproof dish. Level it out.

3. Combine sour cream with the same amount of water and a pinch of salt. Whisk with a fork and pour this sauce over the potatoes.

4. Peel the onion, chop it into half rings and place them on top of the potatoes. Season lightly.

5. Place minced meat in an even layer on top of the onions.

6. Wash the tomatoes, wipe with napkins and cut into thin circles. Place them on a layer of minced meat. Lightly salt again.

7. Make a thick mesh of mayonnaise over the tomatoes and sprinkle with cheese shavings. Place the pan in the oven for an hour. Bake at 180 C. Take out the potato casserole with cheese and minced meat. Cool slightly and cut into portions.

Recipe 2. Casserole with cheese, minced meat and cauliflower

Ingredients

    any minced meat – 400 g;

    chicken seasonings;

    200 g carrots;

    black pepper;

    half a kilogram of cauliflower;

    bell pepper - pod;

    cheese – 100 g;

    cream – 300 ml;

    mayonnaise – 100 g.

Cooking method

1. Peel the carrots, wash them and chop them into large shavings. Chop the peeled onion into small cubes.

2. Fry the onion until transparent, then add the grated carrots and simmer until soft.

3. Separate the cauliflower into inflorescences and boil for five minutes in lightly salted water. Then place in a colander and cool.

4. Three cheese into large shavings. We remove the bell pepper pod from the stalk and cut the vegetable into rings.

5. Grease the refractory pan with a piece of butter. Lay out the casserole in layers:

2. Three large cheeses. Place half of the potato slices in a deep ovenproof dish. Pepper and salt.

3. Place onions on top of the potatoes. If you wish, you can pre-fry it until golden brown. Place minced meat with mushrooms on the onion.

4. Sprinkle everything with cheese shavings. Place the remaining potatoes on top, lightly pepper and salt.

5. Combine mayonnaise with sour cream. Beat in the egg. Peel the garlic and squeeze it into the filling. Season with pepper and salt. Whisk thoroughly until smooth.

6. Pour the prepared sauce over the casserole. Place the pan in the oven and bake at 200 C. Shortly before the end of cooking, sprinkle with cheese and wait until it melts. Take out the finished potato casserole with cheese and minced meat, sprinkle with finely chopped fresh herbs.

Recipe 4. Casserole with cheese, minced meat and buckwheat

Ingredients

    two bags of buckwheat;

    a bunch of greenery;

    300 g mixed minced meat;

    black pepper;

    a quarter stick of butter;

    sour cream – 30 g;

    two eggs;

Cooking method

1. Place buckwheat bags in boiling water and boil over low heat. Remove the bags, cool and transfer the cereal to a bowl.

2. Peel the vegetables. Finely chop the onion. Grind the carrots on a coarse grater. Pour vegetable oil into the frying pan. As soon as it warms up, dissolve the cream in it. Fry the vegetables until golden brown and cool.

3. Add finely chopped onion, egg yolk and salt to the minced meat. Knead everything thoroughly. Beat the egg white into a stable foam. Add fried vegetables and whipped egg white to the minced meat. Stir gently.

4. Peel the apple and grate it coarsely. Grind the cheese as well. Add apples and cheese to the buckwheat, beat in the egg, pepper and salt. Stir.

5. Place the buckwheat mass in a deep silicone mold, distributing it along the bottom and sides. Place the minced chicken in the middle and smooth it out with a spatula.

6. Beat the egg with sour cream. Add some salt. Pour the resulting mixture over the casserole and leave until thoroughly soaked.

7. Place the casserole in an oven preheated to 200 C for 20 minutes. Then sprinkle the casserole with grated cheese and bake for another five minutes until a golden brown crust forms on the surface. Before serving, garnish the casserole with cheese and minced meat with sprigs of dill.

Recipe 5. Casserole with cheese, minced meat and eggplants with Bechamel sauce

Ingredients

    eggplant;

    two carrots;

    onions – 2 pcs.;

    black pepper;

    150 g cheese;

    half a kilogram of minced pork and beef;

    buckwheat – half a glass;

    dill and parsley;

    tomato paste – 50 g;

    two cloves of garlic.

    Bechamel sauce

    butter – 40 g;

    black pepper;

    milk - one and a half glasses.

Cooking method

1. Wash the eggplant and cut into slices half a centimeter thick. Place in a bowl. Sprinkle with salt and leave for half an hour. Then rinse and place on a napkin.

2. Heat the oil in a frying pan. Place the eggplants and fry on both sides until golden brown. Transfer to a plate lined with a disposable towel.

3. Peel the onion, rinse and cut it into quarter rings. Coarsely grate the peeled and washed carrots.

4. Wash the frying pan where the eggplants were fried, wipe it and heat the oil in it. Fry the onion in it for two minutes, then add the carrots and continue to fry, stirring, for another five minutes. Transfer the fried vegetables to a plate.

5. Sort out the buckwheat, rinse and pour a glass of boiling water. Cook crumbly buckwheat porridge.

6. Rinse the greens, dry them and finely chop them. Squeeze the peeled garlic through a press. Fry the minced meat in hot oil. Then transfer it to a blender, add garlic, herbs and tomato paste. Season with pepper and salt. Mix until smooth.

7. Place eggplant on the bottom of the mug mold. Spread the minced meat evenly on top of them. Place fried vegetables in the next layer. Then distribute the boiled buckwheat.

8. Melt the butter in a frying pan, add flour to it and cook, stirring, until smooth.

9. Pour in hot milk in a thin stream, while stirring vigorously. Cook for a couple of minutes from the moment it boils. Salt, add chopped herbs, mix and turn off the heat. Pour sauce over casserole.

10. Bake the dish at 180 C for 20 minutes. A few minutes before ready, sprinkle with cheese shavings. As soon as it melts, take it out, cool slightly and cut into portions.

Recipe 6. Casserole with cheese, minced meat and pasta

Ingredients

    mixed minced meat - kilogram;

    sea ​​salt and pepper;

    pasta – 400 g;

    olive oil;

    400 g tomatoes;

    two onions;

    300 g cheese.

Cream sauce

    black pepper;

    half a stick of butter;

    liter of milk;

    flour – 100 g;

    sea ​​salt.

Cooking method

1. Boil the pasta until cooked. We throw them into a colander.

2. Finely chop the onion. Pour boiling water over the tomatoes and remove the skins. Finely chop the pulp.

3. Fry the chopped onion in vegetable oil until transparent. Add the minced meat and fry it lightly, stirring so that no lumps form. Add tomatoes, pepper, salt and cook over medium heat for 15 minutes.

4. Fry the flour in butter until golden brown. Pour milk in a thin stream, stirring continuously, and cook until thickened. Season with pepper and salt. If you wish, you can add nutmeg or crushed garlic. Fill the casserole with sauce.

5. Grind the cheese on a medium grater. Place the boiled pasta in a deep pan and smooth it out with a spatula. Spread half the sauce on top. Place the minced meat in the next layer. Level and pour sauce over it. Sprinkle generously with cheese. Bake at 180 C for 20 minutes.

    Use homemade minced meat to prepare the dish.

    To make the dish juicy, add more finely chopped onion to the minced meat.

    It is advisable to add lard ground in a meat grinder to the minced chicken.

    To reduce the calories in potato casserole, soak peeled raw potatoes in cold water for 20 minutes to remove excess starch.
